Methodology (1): LCA Life Cycle Assessment (LCA) methodology is defined by the ISO 14040:2006 and ISO 14044:2006 standards which cover four phases LCA model: Functional Unit: 1 liter of bulk wine Approach: from cradle-to-gate Method: ReCiPe Midpoint (H) Software: SimaPro 9.6.0.1 Database: EcoInvent 3.10
Methodology (2): LCC Adoption of the traditional Life Cycle Costing (LCC) approach, - Functional unit: 1 L of bulk wine - Approach: from-cradle-to-gate - Exclusive focus on direct financial costs incurred by the product/system owner - 4 cost categories

Discussion of Results Sustainability depends on the adopted Technology Alternative production system, based on Non-acoholic fermentation, seems promising, though needs some optimization to reduce the acquisition costs (the enlargement of the market size may exert a positive role?) At present, reverse osmosis appears as the most preferable, either from the environmental and from the economic perspectives
